Potato Expo 2027

Potato Expo is the largest annual potato industry conference and trade show in North America, presented by the National Potato Council (NPC). The next edition runs January 5–7, 2027 at the Gaylord Rockies Resort & Convention Center in the Denver, Colorado area (Aurora, CO).

The event brings together U.S. and international potato growers, suppliers, researchers, and industry leaders for educational sessions, networking, and a major trade show floor showcasing products, equipment, technology, and services across the potato supply chain. Registration and exhibitor resources are published on the official Potato Expo website and the NPC event registration portal.

NPC advocates for U.S. potato growers on federal legislative, regulatory, environmental, and trade issues. Potato Expo rotates host cities; recent editions have included Austin, Las Vegas, and Dallas before the 2027 Colorado program.
