SIAL La Cuisine
SIAL La Cuisine is the flagship cooking competition of SIAL Shanghai, the international food and beverage exhibition. It is a must-visit for food professionals and visitors alike: eight international teams of Michelin-recognised chefs compete over two days, working only from the raw ingredients provided to tell a story around a set theme.
The competition is endorsed by WACS, the World Association of Chefs' Societies, which sets the technical standard for the contest. Judging is carried out by an international panel of chefs, and the format mixes live cooking with presentation to the jury.
Edition and location
The next edition runs 18-20 May 2027 at the Shanghai New International Expo Centre (SNIEC) in Pudong, Shanghai, alongside SIAL Shanghai. Exact daily competition hours are published in the show programme closer to the event.
Who attends
La Cuisine draws national culinary teams, chef-instructors, catering buyers, equipment and ingredient suppliers, and food-media, making it one of the most visible culinary stages in the Chinese food calendar.
